It’s an exciting time of new beginnings for me.  I've been in Kenya for approximately 3 months now and have already enjoyed a variety of experiences as I become absorbed into the East African experience.  First of all, Kenya is a beautiful; the country, the people, and the wildlife...  Wow! Who would have thought that I would be up close and almost personal with giraffes, zebra and elephants!!!  I have not been on “safari” officially yet though so imagine how it will feel to see wild lions roaming free instead of seeing them caged-up in European zoos! 

I’ve done quite a lot of travel around the country though and I’ve met some amazing people. Many are interested in improving their lifestyles and quite fascinated by the way I eat and enquiring what’s the green (spinach) or white (tofu) filling of my sandwiches, or how to cook eggplant, mushrooms or pumpkin! Some, cannot believe we truly eat nothing from any animals...no cluck, no moo, no oink, no maaaaah...nothing! 

What I’ve discovered is that although many are interested in farming, or have farms and Kenya is an agriculturally rich country with a naturally agrarian people, all over the world we are under the influence of the standard American diet (SAD) with a high proportion of meat, refined and highly processed foods...yep fast food and yes it is sad that its affecting the health and well being of Africa.

What makes it just so important?
Eating locally grown and highly nutritious foods, like the variety of wild greens available such as sukma wki (kale), terere (amaranth greens, callaloo), managu (solanaum), purslane, and so on, is considered “poor people’s food” but seriously, if the poverty stricken ate like this and avoided meat, they really would hardly get sick.  The truth is some of these grow wild, naturally organically and may be even be found in your back yard! I challenge you to take a closer look. How cost effective is that?

The problem is,  we have been disconnected from our connection to the soil, with no idea that eating plant-based foods, that often grow so close to home, directly from naturally organic soil,  is the most nutritious way to eat. We’re disconnected from the original dietary law (Genesis 1:29) because we were all taught the prophecies have been fulfilled, that we have to eat meat to be healthy and to avoid those telling the simple truth: stay in harmony with and obey natural laws of the earth to maintain the health of the mind, body and soul.  When we eat a pure diet, like this, we are able to prevent and often reverse many eating-related diseases such as diabetes, cancer, high blood, pressure, depression, obesity, insulin resistance, stress... the list can go on and on.

I have to tell you, since I’ve been here, I’ve been enjoying eating my favourite fruit. “What’s my favourite fruit?” I hear you ask. It’s the king of fruits – pineapple. I’ve been feeling so much better for it. I know it helps to reduce stress for me because it’s naturally an anti-inflammatory and it helps you digest protein more efficiently.

Whenever we are stressed, it lowers our energy and we don’t feel good.  When we don’t feel good it throws us off balance and most of the time we don’t pay enough attention to our overall well being to catch any imbalances before they gradually build up over time into something much more serious.

The thing is, we’ve all been so stuck in our habits of doing things a certain way and eating the way we’ve been taught without question.  We go about day mostly without thinking of how everything we do, eat, say, think or wear is connected to our overall health and well being until something happens. Unless someone shows us a different perspective, it’s sometimes hard to change old habits and lifestyle practices as it’s an integral part of who we are. It’s a tangled web connected to how we feel about ourselves and how we cope with every day stresses and these stresses, control your though patterns and  your thoughts patterns become the emotional triggers that maintain the mind-body spirit link that create a dis-ease energetically in the body long before it manifests physically.
